TILTON ― Head to The Lake Estate on Winnisquam, the newest resort to open in New Hampshire and in New England, for an unforgettable culinary experience on Feb. 28, as they welcome Duckhorn Vineyards of Napa Valley for an exclusive wine pairing dinner.

Chef Chris Viaud, director of culinary arts, has crafted an elegant five-course menu showcasing the finest local ingredients and seasonal bounty from New Hampshire farms. Each course will be thoughtfully paired with exceptional wines from Duckhorn's renowned portfolio, presented by a winery representative who will share the stories and craftsmanship behind each selection.

The menu is as follows: 

First course: Beef carpaccio with black radish, lemon gel, arugula and horseradish mousse topped with crispy garlic. Paired with: Decoy Limited Alexander Valley red blend. 

Second course: Peri peri hasselback starling purple sweet potato with chermoula, buttermilk and herbs. Paired with: Duckhorn Napa Valley chardonnay. 

Third course: Pork rilette which features braised pork shoulder, confit pork belly, pickled figs, elderberry glaze, pistachio dukkah and cardamom tuille with koginut squash gel. Paired with: Duckhorn Napa Valley merlot. 

Fourth course: Pheasant “A L’Orange," a quinoa salad with charred shallot chestnut puree, cider and port braised cabbage, cara cara orange gel, kumquat mostarda and Thai basil. Paired with: Kosta Brown Santa Rita Hills pinot noir. 

Fifth course: Mignardise, or chef's surprise bite-sized treat. 

Set in the majestic Estate Ballroom overlooking Lake Winnisquam, this evening promises remarkable food, world-class wines, and the warm conviviality that makes memorable gatherings truly special.
