Despite a federal court ruling to the contrary recently, city potato monitors fined the lunchtime cook at a popular downtown diner $500 and confiscated his sliced Idaho yellows when they saw him put them in a fryer intended for reds and Russets.
In his defense, the cook asserted, "My other fryers were already full, and I couldn't stall with this long line of drooling, early-lunch customers. Rule is, I gotta give everyone from the front of the line to the back the same consideration ... hot, crisp and plenty, right out of the fryer."
He continued, "Potatoes is what they want, and potatoes is what they get, no matter what their color, what someone calls them, or from whose fields they came. Hungry stomachs rumble about this time of day, and I'm here to answer the call."
An afternoon visit from the health department found that there was no carryover of taste or color from putting different varieties of potatoes in the same fryer.
A time-and-efficiency expert stopped by to examine the kitchen set-up, the number of customers and the supply of potatoes. He thought the cook did the right thing by temporarily using a fryer not specifically intended for Idaho yellows, invoking the adage "The customer comes first."
A bystander dietician chimed in that the "potato monitors" were inappropriately named, and that they should not have confiscated the diner's spuds. "Say what you will about the cook," she said, "but don't blame the potatoes."
