Vegan Cooking Class and Holiday Feast at Pines Community Center

NORTHFIELD — Celebrating her one year anniversary of teaching vegan cooking classes at Pines Community Center, Louisa Dell'Amico is offering a special six-course Vegan Cooking Class and Holiday Feast on Thursday, Dec. 20, 5:30 – 8:30 p.m.

On the menu: Warmed Purple Cabbage, Spinach,& Apple Salad; Seitan Roast Stuffed with Walnuts, Mushrooms, & Cranberries; Delicata Squash with Cauliflower Bechamel; Vanilla Ginger Pear Sauce; Stuffing with Gravy; Mini Eggnog Cupcakes and Herbal Tea. The fee for both the class and the dinner is $40.

"In addition to the organic grains, soy products, and spices for this meal, the spinach, apples, and pears will also be organic. The cauliflower, purple cabbage and delicate squash will be organic, if I can find it," said Dell'Amico. "I'd like to welcome anyone who's trying to get through the holidays without eating boatloads of high-caloric foods to come to my cooking class and holiday feast. I don't want anyone to feel deprived, so we'll be making mini eggnog cupcakes in an attempt to give folks a delicious treat without eating an entire cupcake. I also want to show people that they can eat a delicious and satisfying array of healthier foods without eating any animal-based foods whatsoever," she explained.

The fee for both the cooking class and the holiday feast is $40. Children 12 and under are free. Send two checks, one for $25 payable to Pines Community Center, and one for $15 payable to Louisa Dell'Amico, and mail them together to: PCC, PO Box 262, Tilton, NH 03276.
