GILFORD — In mid-January, Natural Roots & Remedies moved to a larger location in Gilford, as their fist year they exceeded expectations for retail products and needed a larger location to respond to customers demands for healthy take out food.

"Since the move, we've experienced a lot more traffic for our health foods retail store and there's a lot of great buzz about our café. It's called Synergy Café and it will be open around February 15th," says owner Chellsey Latham. "The tagline is: 'Where the Tribe meets and eats.' There's a story there which our customers discover when they walk through the store."

Synergy will have a wide verity of soups every day rustic butternut squash, carrot ginger and tortilla soups. People asked for authentic southwestern burritos so in response the cafe will offer its own healthy version with grass feed beef and an organic vegetarian burrito with some incredible fermented probiotic rich sauces. All ingredients from local growers in season, therefore giving local customers a farm to table experience.

"Having lived in the Southwest for a number of years, I found I loved what they cooked at Wild Oats for breakfast and lunch take out and I've duplicated the tastes with healthy ingredients," says Chef Jeff Thayer. "I've also added a few Native American additions which make these burritos unique. Same with our Tortilla soup."

Other food options include vegetable pesto and curried vegetable cold wraps with unique sauce toppings. For those who want a lighter fare, the cafe will offer carrot, pepper, sun dried tomato, smoked cheese, and a caprese panini.

"People ask what makes Synergy different? Because we ferment some of our vegetables and sauces, the process heightens the taste and their probiotic content is high. We've made sure our wraps and burritos taste incredibly good and they are healthy," says Chef Jeff. "I have been fermenting foods and kefirs for a number of years and the benefits are worth the effort. We've designed each of the wraps and burritos to be a fusion food work of art blending one or more ethnic food combinations with toppings and sauces."

Synergy is a unique experience for all guests pertaining to both food and atmosphere. The cafe will hold a Movie Night which features cutting edge films and documentaries concerning the organic, and non-gmo foods movements. Additionally, food workshops will be held regarding fermenting foods, cooking fusion foods and making fermented beverages such as water kefirs. The space itself is unique, as much time was spent designing the interior to give it a tribal and eclectic feel. Much of the interior materials have been recycled from pallets, old tin and reused wood.
